Whole Moong Daal

Ingredients
  • 1 cup moong lentils
  • 1 1/2 cup water
  • 1 cup zucchini
  • 1 cup butternut squash
  • 1 cup spinach
  • Spices
  • 1 tablespoon oil
  • 1/2 teaspoon turmeric
  • 1/2 teaspoon cumin seeds
  • 1 teaspoon mustard seeds
  • 1 teaspoon salt
  • 1 cinnamon stick
  • 1/2 tablespoon garam masala
Instructions
  1. Wash and chop the zucchini, butternut squash, & spinach into small pieces and set aside

  2. Rinse the moong lentils until the water runs clear and set aside

  3. In a pan over low heat, add oil & cumin seeds, mustard seeds, turmeric, garam masala, & cinnamon stick for 1-2 minutes

    heating the spices in oil helps boost their flavor
  4. Add chopped veggies, lentils, spice mix, water, & salt to a pressure cooker

  5. Let cook for 15 minutes

  6. Remove lid and add in chopped spinach & stir until combined

  7. Serve over basmati rice or on its own & top with vegan yogurt
