Wash and chop the zucchini, butternut squash, & spinach into small pieces and set aside

Rinse the moong lentils until the water runs clear and set aside

In a pan over low heat, add oil & cumin seeds, mustard seeds, turmeric, garam masala, & cinnamon stick for 1-2 minutes
heating the spices in oil helps boost their flavor -

Add chopped veggies, lentils, spice mix, water, & salt to a pressure cooker
-
Let cook for 15 minutes

Remove lid and add in chopped spinach & stir until combined

Serve over basmati rice or on its own & top with vegan yogurt
