Veggie & Tofu Tray Bake

Ingredients
  • 1 can chickpeas
  • 1 large red pepper
  • 1 sweet potato
  • 2 small broccoli heads
  • 1 tofu block
  • Spices
  • 3 tablespoons avocado oil
  • 1 tablespoon garam masala
  • 1 tablespoon smoked paprika
  • 1/2 teaspoon turmeric
  • 1/4 teaspoon salt
  • Topping
  • 1 tablespoon vegan yogurt
  • 1/4 teaspoon red pepper flakes
Instructions
  1. Preheat oven to 450F

  2. Remove tofu from packaging & press to remove the excess water for 10 minutes

    use something heavy to press
  3. Chop up all veggies into small, bite size pieces and set aside

  4. Drain and rinse the chickpeas and set aside

  5. Chop pressed tofu into small pieces

  6. Add all veggies, tofu, & chickpeas to a baking pan

  7. In a small bowl add all the spices & oil and mix together to create a marinade

  8. Drizzle the marinade over top of the veggies, tofu, & chickpeas and mix until everything is fully coated

  9. Bake at 450 for 30 minutes or until veggies & tofu are crispy

  10. *optional* top with vegan yogurt & crushed red pepper flakes
