Veggie & Tofu Tray Bake

Preheat oven to 450F
-
Remove tofu from packaging & press to remove the excess water for 10 minutes
use something heavy to press -
Chop up all veggies into small, bite size pieces and set aside

Drain and rinse the chickpeas and set aside

Chop pressed tofu into small pieces

Add all veggies, tofu, & chickpeas to a baking pan

In a small bowl add all the spices & oil and mix together to create a marinade
-
Drizzle the marinade over top of the veggies, tofu, & chickpeas and mix until everything is fully coated

Bake at 450 for 30 minutes or until veggies & tofu are crispy
-
*optional* top with vegan yogurt & crushed red pepper flakes
