Preheat oven to 400F
Chop up tomatoes, red bell pepper, and broccoli
Put theĀ tomatoes, bell pepper, & broccoli onto a baking tray ( keep them separate ) for 20 minutes
Cook pasta according to package directions
Add all sauce ingredients to a blender and blend until smooth
Add Sauce and pasta to a pan and mix together
Plate the pasta & add broccoli & vegan cheese on top
