Mexican Black Bean Burger

OK I grew up vegetarian..so for me 'burger night' only meant one thang..MEXICAN BEAN BURGER! I absolutely love a wholesome Pattie of veggies and lentils and pulses. This is a quick and easy sweet potato black bean burger with a chipotle mayo and a zesty fresh corn, jalapeño salsa...NEED I SAY MORE!?

Preheat oven to 200C/ 400F

Heat oil and add cabbage and asafoetida, sauce on medium heat for a couple of minutes

Add sweet potato, salt, and cumin powder. Saute for 2 -3 minutes then cover with a lid and Cook until soft, approximately 10 minutes.

Add black beans, chipotle powder, and tomato paste to the pan. Cook for 5 minutes with a closed lid.

Add burger mixture, jalapeños, parsley, and cilantro into a food processor and pulse till combined, the mix doesn't need to be completely crushed, I quite like having whole beans in there too ( you can also just mash with a potato masher or hands..get durrty!)

Split mixture into 4 or 6 ( depending on the preferred size of pattie) and mould into burger pattie shape 1 inch thick and 3-4 inches wide

Place onto a baking tray lined with parchment paper. Spray tray with oil then places the patties on. Spray or brush each pattie with oil then place into the oven and bake for 20 minutes flipping over halfway.

Once firm on both sides, remove and gather your toppings and sauces of choice. I I would recommend the chipotle mayo and corn salsa 😊 and the in-and-out sauce

Toast your bun, layer on the sauces generously, and add your crisp lettuce, your pattie, and the corn salsa.
