Preheat oven to 400

Cook your pasta according to instructions on box

Place butternut squash, peppers and zucchini on a baking tray lined with parchment paper and spray with oil and mixed herbs and a sprinkle of salt

Bake for 15-20 minutes until veggies are roasted

Add all dressing ingredients to a jar and mix until combined

Add cooked and strained pasta and all remaining ingredients into a bowl

Pour dressing over bowl of pasta and veggies and mix
