Basically autumn is my favorite season and so this is a recipe to celebrate us coming into this new season :)! The colors and ingredients TOTALLY remind me of Autumn leaves, also these are all autumn seasonal ingredients :)! I use a special grater to create the matchstick shape, it's different from a grater and I really love having the utensil, it makes a salad look a little more special and it's not a pricey gadget either!

Ingredients
    Slaw
  • 1 cup Fennel (grated or using a julienne/matchstick grater)
  • 1 cup Beetroot (grated or using a julienne/matchstick grater)
  • 1 cup carrot (grated or using a julienne/matchstick grater)
  • 1 cup toasted sunflower seeds
  • Dressing
  • 2 tablespoons olive oil
  • 1/4 cup lemon juice
  • 2 tablespoons non dairy yoghurt
  • 1 teaspoon mustard
  • 1 tablespoon agave/maple syrup
  • 1 teaspoon salt
  • 1 teaspoon asafoetida
The Magic
  1. Add all salad ingredients to a bowl and mix

  2. Add all dressing ingredients to a jar and give it a good shake

  3. Pour dressing over salad and mix

  4. ♡ Say a prayer of gratitude, sprinkle a whole lotta lurve and serve with joy
