Asparagus, Zucchini, and Fennel

Just hearing the ingredients can't you feel spring coming!? This is such a lovely simple light soup, super easy to digest and just cleansing to yo colon! All 3 vegetables are so unoffensive to all body types 😂...like the least offensive vegetables..like you know that friend who's just cute and kind and doesn't get bothered by much..THIS SOUP IS TOTALLY THAT FRIEND 💁🏻💁🏻 kind to all body types and digestion!

In a heavy pot, over medium heat melt the vegan butter

Add the fennel & asafetida, saute for 2 minutes

Add asparagus, zucchini, bay leaf, salt, cashews, and water

Place lid on and cook on medium heat for 15 minutes until vegetables are super soft and mushy

Using a blender, puree the soup till creamy and smooth

Note
Serving suggestions: serve warm with a drizzle of REALLY good quality olive oil, a sprinkle of black pepper and a stick of bread.
