Apple Streusel Muffins

I know, I know, it’s like I have a streusel obsession but TRY tell me these muffins are better without it, go on try… YOU JUST CAN'T BECAUSE IT IS NOT TRUE.
The buttery pecan streusel topping really adds so much fun to these lil cute muffins. Then we have the almond butter maple glaze which really adds richness to it and the apple makes the inside so moist! ll together they are basically a dream. You can have them for breakfast, tea time, coffee time, cuddle time, anytime really!
Ingredients
The dry
The wet
Pecan streusel
Glaze
Instructions

Preheat oven to 375F

Add all dry ingredients for muffins into a bowl

Prepare flax egg by mixing water and flax meal and set aside for a couple of minutes

add all wet ingredients into a smaller bowl and when flax is thick and gloopy add into the wet ingredients and mix

add wet ingredients into dry ingredients and mix (the mixture will be thick)

Set aside and make streusel mix by simply adding all ingredients into a bowl and mix. it will resemble wet sand

Spoon mix into your muffin tray or cases

Bake in the oven for 15-17 minutes or until golden brown

Meanwhile, make your glaze by mixing all ingredients in a bowl

Once the muffins are done, take them out and let them cool inside the tray for about 10 minutes, then drizzle with the glaze

Note
Notes/Substitutions:
1. If you don’t have Pumpkin spice use extra cinnamon powder
2. If you don’t have Vegan butter use extra virgin coconut oil, melted
3. Store in airtight container at room temperature for 2-3 days.

Serving suggestions: best eaten at room temperature and you could do a cheeky drizzle of cream too!
